Spinach & Feta Breakfast Casserole
Ingredients
2 C pancake mix – whole grain if they have one
(I’ve used Kodiak Cakes high protein mix before too)
10 oz. frozen package of frozen baby spinach
½ C fat free feta
4 Tbsp. butter
2 C skim milk
2 eggs
Instructions
- Preheat the oven to 350
- Mix the eggs, milk and defrosted spinach together.
- Spray a 9×13 pan and pour mixture into the pan.
- Sprinkle the crumbled feta on top.
- Melt the butter and pour over the top.
- Cook 50-60 minutes or until lightly brown.
