Kale Salad with Chicken
(Makes 2 servings)
3 C Kale (washed and cut)
2 Tbsp. red onion
¼ C low sugar craisins (low-sugar variety if available)
1 tsp red pepper flakes
2 Tbsp. lemon juice
1 Tbsp. olive oil
1 oz. slivered almonds (or other nuts of your choice)
*Add chicken, tofu or other protein if desired
1. Combine all ingredients into a bowl and toss well.
2. Let salad sit for a few hours prior to serving to let the flavors soak in!
