Ingredients
12 oz. of fresh or frozen cranberries
1 cup sugar
2 pears
1/4 cup chopped crystallized ginger
1 seeded and minced jalapeño
1 tsp grated fresh ginger
1/8 tsp salt
1 tsp cinnamon
1 tsp clove
1/4 tsp nutmeg
1/2 tsp cardamom
Serves 28
Directions:
1. Combine 1 (12-oz) bag fresh or frozen cranberries and 1 cup
sugar in a saucepan over medium heat; cook, stirring, until cranberries
begin to burst and sugar dissolves, about 7 minutes.
2. Stir in 2 peeled, diced pears, 1/4 cup finely chopped crystalized
(candied) ginger, 1 minced jalapeno pepper (discard seeds for
less heat), 1 tsp grated fresh ginger, and 1 pinch salt. Cook,
stirring, until pears are tender, 5 to 8 minutes.
3. Let cool before serving, or before covering and freezing. (To
serve after freezing, thaw overnight in the fridge.)
