Spinach & Feta Casserole
Serves 12
Ingredients:
2C Bisquick pancake mix
10 oz. frozen baby spinach
1/2 C fat-free feta cheese
4T butter
2C skim milk
2 eggs
Instructions:
- Preheat the oven to 350
- Mix the eggs, milk and defrosted spinach together. Spray a 9×13 pan and pour mixture into the pan.
- Sprinkle the crumbled feta on top.
- Melt the butter and pour over the top.
- Cook 50-60 minutes or until the top is brown.
Per serving: 130 calories, 4g fat, 16g carbohydrates, 1g fiber, 2g sugar, 6g protein
