1 cauliflower, chopped
1 can of white beans, drained
1 onion, chopped
2 red bell peppers, chopped
2 Tbs garlic, minced (adjust as desired)
1 packet of taco seasoning
1 pounds of lean ground turkey
- Steam cauliflower.
- In a food processor add steamed cauliflower and drained beans and puree until a smooth consistency is reached.
- Preheat oven to 350 degrees.
- Sauté garlic and onions using Pam or alternative (canola oil). Now add ground turkey, taco seasoning and cook. Once ground turkey is almost fully cooked add chopped bell peppers. Cook for about 5 more minutes and remove from stove.
- Add ground turkey mix to oven safe dish. Even out the top and then add the cauliflower and bean puree to dish. Bake for 20-30 minutes at 350 degrees.
