Winter Kale Salad
(Serves 8)
Ingredients:
1 1/2 lb. Kale
1/4 Red Onion-chopped
3/4 oz. Dried Cranberries
1 Red bell pepper-chopped
1/2 tsp. Red pepper flakes
1 tsp. Onion Powder
2 Tbs. Olive oil
1 C. Lemon or Lime juice
Instructions
1. Wash and chop kale into bite-sized pieces
2. Chop onion, bell pepper and combine with kale
3. Make dressing with lemon juice, oil, onion powder and red pepper flakes
4. Combine dressing with salad and craisins
