Super Simple Snack: The Protein Box
This snack idea is a take on the Starbucks protein box, but you’ll save money and you can customize it! Try packing up two or three of them at a time so you can just grab them and go. You’ll have a nutritious snack that you can take anywhere!
Prepare (cut, wash) all ingredients and put into plastic bags or a Tupperware that is divided into 4 sections. Lunchbots has some fantastic sectioned containers that would be great for this kind of snack. Check them out at www.lunchbots.com.
4-6 whole grain crackers (Triscuit’s or Mary’s are both choices)
1 wedge of low-fat laughing cow cheese, baby bell cheese (or other low-fat cheese, approx. 1 oz.)
2 Tbsp. peanut butter or 1 oz. nuts
½ apple or 2-3 celery stalks cut into thirds
1 hard-boiled egg
Nutrition Facts: 470 calories, 24 g fat, 40 g carbohydrates, 19 g protein
