( Makes 4 Servings)
¼ cup chopped onion
2 garlic cloves
¼ cup chopped cilantro
Juice of 1 lime
Chopped jalapenos (optional)
Salt and pepper to taste
- Place zucchini in a microwave-safe dish, cover with a damp paper towel and microwave on high until tender, 4-5 minutes. Press on the zucchini to remove any liquid.
- Transfer the zucchini to a large bowl; add avocado, cilantro, onion, lime juice, jalapenos, salt and pepper and coarsely mash until combined.
Per Serving: 85 calories, 6 grams fat, 7 grams carbohydrates, 4 grams fiber
Makes a great dip to serve with veggies and whole grain crackers or pita chips
