Super Easy Eggs & Veggies In A Mug
Ingredients:
¾ c egg substitute (like egg beaters)
½ C spinach
2 Tbsp. chopped bell pepper (any color you prefer)
1 Tbsp. chopped onion
1 oz. reduced fat cheese (Swiss, cheddar, feta, or chevre would be great!)
Instructions:
Spay non-stick cooking spray in a medium microwave-safe mug or small bowl. Mix all ingredients and pour into mug. Microwave for 1 minute or until egg is cooked (time may vary slightly). Serve with fresh fruit or a slice of whole wheat toast and enjoy!
