Quick & Easy Breakfast Sandwich
1 whole wheat English muffin
1 egg beaten
1 slice of tomato
1 handful of fresh spinach leaves
Salt & pepper to taste
½ oz. reduced fat cheese (optional)
Toast English muffin. In a small round microwave safe dish heat the egg for approximately 1 minute. You can mix all of the ingredients together before microwaving them or just layer the ingredients individually after the egg is cooked, like a sandwich. Top English muffin with egg, tomato, spinach, cheese, salt and pepper and enjoy.
