Caitlin’s Diet
As a dietitian I am often asked what I eat. I’ll start by letting you know that I am a vegetarian. I eat eggs, fish, and a small amount of dairy (cheese & Greek yogurt) and try to make it a point to include protein and color with each meal. I am by no means a perfect eater! On average, I take in about 1700-2200 calories and 150 g of protein per day and track my daily intake using my fitness pal. My food choices vary a little but I am consistent for the most part. Here is what a typical day looks like for me.
Breakfast (7:15 am) ¾ C Old-fashioned oatmeal scoop of protein powder mixed in (I use Prescription Nutrition’s fresh whey isolate- unflavored) ½ C berries ½ oz. walnuts |
Snack (10:00 am) 3 hard-boiled egg whites or an orange and a piece of low-fat babybel cheese |
Lunch (12:00 pm) 5-6 oz. baked salmon Spinach salad with craisins, ½ an apple, ½ oz. walnuts, ½ oz. cheese, 1-2 Tbsp. Newman’s Own balsamic dressing |
Snack (3:00 pm) Quest protein bar |
Dinner (5:30 pm) Morning star black bean burger patty Whole wheat sandwich thin avocado slices (1/4-1/2 of a whole avocado) 1 medium apple |
Snack (8:30 pm) 6 oz. plain non-fat Greek yogurt (Fage brand) ½ C berries |
