Raw Berry Cobbler
(Makes 6 Servings)
Ingredients:
3 cups frozen/fresh mixed berries
1 lemon juiced
5-6 pitted dates
2 cups walnuts
1 teaspoon vanilla extract
Method:
If using frozen berries, partially defrost ahead of time. Pulse walnuts in a food processor until walnuts are coarsely chopped. Add dates and process until a crumbly mixture is achieved. The mixture should stick together when pressed, if the mixture doesn’t stick, add more dates 1-2. Press half of the mixture into your pie/cobbler dish. Mix the berries with the vanilla and the lemon juice, spoon over the entire crust. Top the berries with the remaining crumble mixture and serve.
